Butternut Squash, Sweet Potato, Apple Soup

 


I have tried a lot of butternut squash soup recipes...

mainly because Strongheart always grows a lot of butternut squash

and they are a good winter squash that keeps well over the winter.

I am fairly certain that I've even shared at least one recipe for

butternut squash soup here on the blog, but not this particular one.

I have made this particular recipe before, but decided to make it again

one day recently because I had all of the ingredients on hand.

It turned out so good that I wanted to share the recipe with you.

Butternut Squash, Sweet Potato, Apple Soup

1 medium yellow onion, chopped

1 medium-large butternut squash, cut into 1" pieces

2 medium sweet potatoes, cut into 1" pieces

1 apple cored, peeled, cut into 1" pieces

1/2 teaspoon cinnamon

1 pinch nutmeg

1/4 teaspoon salt

pepper to taste

4 cups veggie or chicken broth

Place all ingredients in crock pot and set to high for 3-4 hours or low 6-8 hours.  Once the veggies are all soft, use either an immersion blender or a stand style blender to puree the veggies until the soup is smooth.

  2. I wish I lived close enough to ask for a taste, because I have no frame of reference for what this might taste like. I've never had butternut squash.

    1. Would you like me to FedEx you some? :-) Butternut squash has a similar (but not exact) taste as that of pumpkin. The apple adds a bit of richness to it.

    1. LOL...I understand, Karen. I am fortunate to be married to a man who is willing to try anything ONCE...and if he then tells me he doesn't like it, I don't make it again. It's part of what has kept us together for 52 years of marriage. :)

  5. Thank you for the recipe. We eat a lot of soup and not just in winter. It's one way of getting enough vegetables in our diet especially since neither of us like salads very much.
