I have tried a lot of butternut squash soup recipes...
mainly because Strongheart always grows a lot of butternut squash
and they are a good winter squash that keeps well over the winter.
I am fairly certain that I've even shared at least one recipe for
butternut squash soup here on the blog, but not this particular one.
I have made this particular recipe before, but decided to make it again
one day recently because I had all of the ingredients on hand.
It turned out so good that I wanted to share the recipe with you.
Butternut Squash, Sweet Potato, Apple Soup
1 medium yellow onion, chopped
1 medium-large butternut squash, cut into 1" pieces
2 medium sweet potatoes, cut into 1" pieces
1 apple cored, peeled, cut into 1" pieces
1/2 teaspoon cinnamon
1 pinch nutmeg
1/4 teaspoon salt
pepper to taste
4 cups veggie or chicken broth
Place all ingredients in crock pot and set to high for 3-4 hours or low 6-8 hours. Once the veggies are all soft, use either an immersion blender or a stand style blender to puree the veggies until the soup is smooth.
This sounds very good! I like the idea of the apple included.
ReplyDeleteIt really is a soup that we enjoy. It's a good way to use those wonderful veggies that the Lord has blessed us with!
DeleteI wish I lived close enough to ask for a taste, because I have no frame of reference for what this might taste like. I've never had butternut squash.
ReplyDeleteWould you like me to FedEx you some? :-) Butternut squash has a similar (but not exact) taste as that of pumpkin. The apple adds a bit of richness to it.
DeleteI would love this and my husband would not. There lies the problem!!
ReplyDeleteLOL...I understand, Karen. I am fortunate to be married to a man who is willing to try anything ONCE...and if he then tells me he doesn't like it, I don't make it again. It's part of what has kept us together for 52 years of marriage. :)
DeleteGreat soup... good idea. I will buy pumpkin and sweet potato. Thank you very much.
ReplyDeleteI baked rolls today and bread yesterday.
I wish you much success with your yogurt.
And above all, have fun with your grandchild.
A happy greeting comes to you from Viola
Thank you, Viola. I hope you will enjoy the soup. Your rolls and bread sound delicious!
DeleteThank you for the recipe. We eat a lot of soup and not just in winter. It's one way of getting enough vegetables in our diet especially since neither of us like salads very much.
ReplyDeleteYou are welcome for the recipe. We are the same way when it comes to eating soup year round.
DeleteI have never made anything like this, but this sounds so delicious and easy, I have copied it and I will make it! Sound so fresh and comforting. Thank you, Dianna! xoxo
ReplyDeleteYou are most welcome, Jenny! xx
DeleteThis sounds like something I would love. Of course, I think of squash soup as "fall" and it is very much spring outside this week...but I do love squash so I think I will be making this soon! Thanks for sharing. I hope you are having a beautiful week!!
ReplyDeleteButternut squash is something that we have year round because it keeps well over winter. I hope you will enjoy it, if you make it.
DeleteI'm sure I'd like that, looks delicious.
ReplyDeleteThank you, Karen. It's something we really enjoy.
DeleteWow, this sounds delicious. I need to try this recipe. Thank you!
ReplyDeleteYou are very welcome, my friend.
