Our temperatures have turned colder again after a few days of rain and I thought it was the perfect time to enjoy some soup and biscuits.
We have an abundance of butternut squash from the garden, as well as carrots, onions and garlic. I started looking through my recipes and decided on this recipe for Copycat Panera Autumn Squash Soup because it included butternut squash, carrots, onions and garlic! I started it in the crockpot around11:00 this morning and it cooked on low for five hours. SO yummy! It's low in carbs and has good flavor.
I knew exactly what recipe I would use for the biscuits because I have made the recipe several times before and they always turn out well. I chose Copycat Red Lobster Cheddar Bay Biscuits. They always make Strongheart's eyes light up.
When we have soup that is a smooth texture, we prefer to drink it from a cup. That's what we did this evening.
Sounds like a wonderful comfort meal when it is cold! I also like soup in the summer! :)

DeleteI can just imagine how delicious the Butternut Squash soup tasted. We have soup often and either have fresh bread or cheese biscuits to go along with the soup. I should try brushing melted butter onto them when I take them out of the oven. Sounds like a great idea. Granny M

Thanks, Mari. We both enjoyed the soup. It was the first time that I had tried that particular recipe. I had made a different butternut squash soup recipe a couple of weeks ago that was good also, but Strongheart seemed to like this one better. He said it had more flavor than the other one. I think that had to do with the "pinch" of cayenne pepper. :)
Deletewell now I can't see the soup but I do love that mug!!! I love that kind of soup but sadly my husband doesn't so I only eat it when my sister makes it for me.

We have a friend who is a potter. :) He does such beautiful work. He just retired from one of the high schools in our area where he was the art teacher.
DeleteI've never had butternut squash, so I'm not sure I'd like it. I'd love to try it at a restaurant or someone's house to see, before going to all the effort at home. I haven't seen it in restaurants, but I haven't been in Panera. Maybe I should look one up. :)
ReplyDeleteThat's a good idea to try it at a restaurant first, Barbara. I know the taste isn't to everyone's liking. This recipe had butternut squash, carrots, pumpkin in it so it definitely had some flavor.
