Garlic Lime Chicken

Garlic Lime Chicken
(another recipe I used to make frequently, but just recently gave a try)

Mix together:
3/4 tsp. salt
1/4 tsp. black pepper
1/4 tsp. cayenne pepper
1/8 tsp. paprika
1/4 tsp. garlic powder
1/8 tsp. onion powder
1/4 tsp. dried thyme and parsley

Sprinkle generously over 4 boneless, skinless chicken breasts.

In a heavy skillet:
2 T. butter
1 T. Extra Virgin Olive Oil
2 tsp. garlic powder
3 T. lime juice

Heat butter and olive oil in a large heavy skillet over medium heat.  Sauté chicken until golden brown, about 6 minutes on each side.  Sprinkle with 2 tsp. garlic powder and lime juice.  Cook 5 minutes; stirring frequently to coat evenly with sauce.

    2. I've had someone else mention having trouble with the comments, although not posting as anonymous. I am not sure what's going on. I think you will enjoy this recipe.

  2. I've copied this recipe for sure! It sounds so good. I might go lighter on the garlic but other than that, it sounds perfect for me!

    1. It really is good and it's also quite easy to make. I didn't have chicken breasts in the freezer at the time, so I just used the chicken tenders that I had instead.

I want to mention to you, Melanie, that if you don't care for spicy things or if they cause you to flare, you may want to consider leaving out the paprika. I made this one time when our Maine family was visiting, and I didn't have paprika. They all enjoyed it so much that our son asked for the recipe. They made it according to the recipe that I have posted here, and they did include the paprika. They renamed it "Fire Chicken".
