Low Carb Breakfast Burritos

 LOW CARB BREAKFAST BURRITOS



8 large eggs

1/2 cup heavy whipping cream

2 Tablespoons butter

1 pound bacon

7 low carb tortillas

1 1/2 cups cheddar cheese, shredded

1/2 teaspoon salt

1/2 teaspoon pepper

Grease a 9x13 casserole dish and preheat oven to 350 degrees F.

Fry bacon until crisp.  When it has cooled, crumble into small pieces.

In a medium-sized skillet, melt butter.

In a bowl, crack eggs and add heavy whipping cream, salt and pepper.  Whisk until thoroughly combined.

Pour egg mixture into skillet and scramble eggs.

In a low carb tortilla, spoon eggs and add some crumbled bacon and shredded Cheddar cheese.  (Reserve some of the bacon and cheese for on top of burrito).

Fold tortillas and place in into casserole dish.

Sprinkle crumbled bacon and shredded Cheddar across the top.

Bake in oven for 10-15 minutes or until heated all the way through.


Personal Notes:  If you are going to be frying a pound of bacon, I would definitely recommend making these the night before.  Once you have the burritos in the casserole dish, just cover the dish with foil and then in the morning, put them in the oven.  

Also, you could use these as a make ahead freezer breakfast by baking them and then wrapping them individually and putting them in the freezer.  Just take them out the night before and thaw in the refrigerator.

When reheating these burritos, I just took a damp paper towel and wrapped a burrito in it, put in the microwave for 30 second intervals until they are the desired temperature.
